Apple Sauce Oatmeal Bars by Hulbe 1 1/2 Cups whole wheat flour 1 Cup rolled oats (not instant) 1/2 Cup wheat germ 2 tsp baking soda 2 tsp cinnamon 1/2 tsp salt 1 Cup thick apple sauce 1/2 Cup + 2 Tbsp water 2/3 Cup orange juice 1/3 Cup honey 2 Tbsp canola oil 1 1/2 tsp vanilla 1 Cup raisins or chopped dried fruit or butterscotch, peanut butter, or carob chips Preheat oven to 350¡ F. Lightly oil a 9 by 13 inch baking pan. In a medium bowl, mix together dry ingredients. Set aside. In another medium-sized bowl, blend together wet ingredients. A large spoonful of thick apple sauce should hold its own shape. If the apple sauce is thin, add an extra 1/4 Cup of it and decrease water to 1/4 Cup + 2 Tbsp. Stir raisins (or other selection) into the liquid ingredients. Stir dry ingredients into wet ingredients. Do not overmix. Pour batter into prepared baking pan and smooth to make an even thickness. Bake in the 350¡ oven for 35 to 40 minutes, until cake begins to pull away from sides of the pan. Cool completely on a wire rack. Cut into bars and enjoy.
