Whole-Wheat Apple Cookies 1 egg 1 cup whole wheat flour 1 cup unsifted all-purpose flour 1 large tart apple, pared, cored & finlely chopped (1 cup) 1 teaspoon baking soda 1 cup raisins 1 teaspoon ground cinnamon 1 cup chopped walnuts 1/2 teaspoon ground cloves Lemon Glaze 1/2 cup butter/margarine, softened Toasted sunflower seeds 1 1/3 cup firmly packed light brown sugar Preheat oven to moderate (375°). Grease cookie sheets. Combine whole wheat flour, all-purpose flour, baking soda, cinnamon, cloves and salt in small bowl. Set aside. Beat together butter and brown sugar in large bowl until smooth and creamy; beat in egg. Blend flour into butter mixture until dry ingredients are completely mixed in; mixture will be a little crumbly. Stir in apple, raisings and walnuts until thoroughly combined. Drop mixture by rounded teaspoonfuls, 2 inches apart, on prepared cookie sheets. Bake in preheated oven for 10 minutes or until lightly browned. Remove cookies with spatula from cookie sheets to wire racks. Sprinkle each with about 1/8 to 1/4 teaspoon sunflower seeds. Cool completely. Lemon Glaze: Combine 1 cup confectioners' sugar, 2 tablespoons lemon juice, 1 tablespoon butter/margarine, softened and 1 tablespoon hot water in small bowl. Beat together until well blended and smooth. Makes about 1/2 cup.
